Mainstream Barramundi Fish Fingers

Ingredients (serves 4)

  • 1 egg
  • ¼ cup of milk
  • 400g barramundi fillets cut into 2cm chunks/ strips
  • ½ cup plain flour
  • 2 cups of breadcrumbs
  • Olive oil spray

 

Method

  1. Preheat oven to 200 degrees Celsius
  2. Whisk egg and milk together
  3. Coat the barramundi in flour, dip into the egg mixture and then roll in breadcrumbs
  4. Lay on a lined baking tray and spray with olive oil
  5. Bake for 15 minutes or until golden brown and cooked through
